Food has always had a special place in my world - not surprising for a 2nd generation Italian-American! Food, family, not taking yourself too seriously - those are the things that have been constants - and they're still sustaining me.  Lucky for me, my partner in crime shares these values - and he bakes! Truly a perfect marriage - he's sweet, I'm savory. And the whole family gets involved, too!

Cool Pie

Keep dough chilled! Don't handle it too much (the fat needs to bind to the flour for flakiness).

More tips on pie - sprinkle top crust with granulated sugar, not powdered, while crust is still hot. It will stick to the crust, and the  sugar glistens!

 

Lose the gas!

A teaspoon of baking soda in your bean pot eliminates the gas, but can also reduce vitamins and flavor. A good soaking, rinsing and soaking again accomplishes the same thing!
