Roasted Pears with Ricotta & Honey

3-4 ripe pears - Bosc or Bartlett -halved & cored

1 cup ricotta

1/3 cup of honey, extra honey to drizzle as garnish (warmed)

1 tsp vanilla

1 tsp lemon zest

1 tbsp lemon juice

Strain ricotta using a cheesecloth and sieve or fine mesh strainer. Add honey, vanilla, lemon zest & lemon juice an blend in food processor until smooth. Refrigerate until ready to use. Preheat oven to 400 degrees. Line baking sheet with foil. Spray or butter aluminum foil. Place pears cut side down on baking sheet and roast for 30-40 minutes, until caramelized. Once pears are tender & caramelized, place on plate, place a scoop of ricotta & honey mixture into pear. Warm honey (30 sec in microwave) and drizzle over ricotta filled pear.

Change it up! Add orange flavored liqueur to ricotta mixture (1 tbsp), such as Grand Marnier. Add slivered toasted almonds for extra crunch!
